Aunt Fan's Caramels (vanilla, with pecans) are on the edge of "too stiff to chew"-- sister-in-law was suggesting that the nephew chew his with his front teeth to extract the loose one.

The chocolate, no nuts, batch is better but still stiffer than I like. I'm clearly being paranoid about the candy thermometer, and letting them get overcook. One more batch...I will try to neither overcook nor produce ones so soft they can't be cut and wrapped.
